Too much white noise? Try this frequency: crackling fire, chirping birds, a gentle breeze rustling the leaves. There's more for your other senses, too -- a glass of Turley cabernet sauvignon, a Québécois foie gras, an earthy facial with Umbrian black truffle oil, a chardonnay bath, an al fresco dip in the hot tub surrounded by 3,000 maple trees. The new Manoir St-Andrews Spa and Détente opened its doors in July 2006 in the bucolic Laurentian Mountains. The idea? Cozy country chalet seduces posh European château. Says co-owner Katya Landry, "We are a haven of peace, a protected bubble of absolute quiet, a sublime sanctuary."

A journey into the Laurentians is like stepping into early Quebec history (though Manoir St-Andrews, set in Saint-Jérôme, is a mere half-hour from Montréal): ancient stone farmhouses with sloping tin roofs, rolling farmland, apple orchards and vineyards. In spring, maple syrup "sugar shacks" dot the countryside. Here at the manoir, the chef is at your service with a five-course custom dinner. The staff is discreet. The spa seduces with chocolate, truffles and vinothérapie. The owner, a passionate aficionado, stocks the wine cellar with boutique labels.
